Frequently Asked Questions
Everything you need to know about our products, shipping, and how to best enjoy the world's finest meats.
How is your meat shipped?
All orders are shipped frozen with dry ice via express overnight or two-day air in insulated coolers. This ensures optimal freshness from our facility right to your door.
What does MS mean?
MS stands for Marble Score. It represents the ratio of intramuscular fat within the meat. Higher scores mean a richer, more buttery flavor. We source the highest possible MS ratings.
What is Wagyu beef?
Wagyu translates to "Japanese Cow." It refers to specific breeds known for intense marbling, extreme tenderness, and rich flavor, raised under strict, traditional guidelines.
Is all your Wagyu from Japan?
We offer authentic A5 Wagyu directly from Japan (such as Miyazakigyu), as well as premium cross-bred Australian Wagyu and American Wagyu to provide a variety of exquisite flavor profiles.
What is A5 Wagyu?
"A" refers to the yield grade (the highest), and "5" is the highest possible quality grade based on marbling, color, firmness, and the quality of the fat. It is the pinnacle of beef.
How should I thaw my steaks?
For best results, we recommend thawing your steaks slowly in the refrigerator for 24-48 hours. Never use a microwave or hot water, as this can ruin the texture and render out the delicate fat prematurely.
How should I cook Wagyu?
Wagyu is best cooked quickly over high heat in a cast-iron skillet or stainless steel pan. Because of its high fat content, it cooks faster than traditional beef. We recommend serving it rare or medium-rare.
Do I need to oil the pan when cooking Wagyu?
No. Wagyu has so much internal marbling that it will baste itself. You can simply trim a small piece of fat from the edge of the steak and use it to lightly grease the pan before searing.
How much Wagyu should I order per person?
Because Wagyu is incredibly rich and buttery, it is much more filling than standard steaks. We recommend planning for 4 to 6 ounces per person as a portion size.
Do you offer dry-aged beef?
Yes, we offer an exclusive selection of Dry Aged beef that has been aged for 50+ days in a climate-controlled room to concentrate the flavor and maximize tenderness.
What happens if my meat arrives partially thawed?
We pack our shipments with ample dry ice. If your meat arrives partially thawed but is still cold to the touch (refrigerator temperature), it is perfectly safe to refreeze or cook. If it arrives warm, please contact our support team immediately.
Do you offer wholesale or corporate gifts?
Yes, we have a dedicated corporate gifting program and can accommodate large orders for special events or corporate clients. Please visit our Gift Shop or Contact page for details.
What is Kurobuta Pork?
Kurobuta is the Japanese name for the heritage Berkshire breed of pig, often called the "Wagyu of Pork." It is celebrated for its deep red color, distinct marbling, and superior flavor.
How long can I keep my Wagyu in the freezer?
When kept in our original vacuum-sealed packaging, our meats can be securely stored in a standard deep freezer for up to 12 months without losing any quality or flavor.
What is your return policy?
Due to the perishable nature of our products, we cannot accept returns. However, we stand by our quality 100%. If there is an issue with your order, please reach out to us and we will make it right.
