At Club Wagyu, when it comes to A-5 we use only Miyazakigyu-Japanese Wagyu A5-Plus (MS 11-12) Miyazakigyu is the Number 1 brand of Japanese A-5 Wagyu!
Miyazakigyu Wagyu are recognized for their quality and consistency, evenly distributed snowflake-like marbling, cherry red color, tenderness and great dense meat flavor. The Steak actually starts to dissolve or melt in your mouth at 77 degrees Fahrenheit.
Miyazakigyu has won the “Wagyu Olympics” in 2007 and 2012 (held every 5 years). It is the first time in the history of the tournament that any brand has been able to win two consecutive titles! They have also won the Japanese Prime Minister’s Award for excellence for the third consecutive time, which is also the first time in the history of the tournament that any brand has won 3 consecutive awards.

Wagyu (often referred to as Kobe beef) is an umbrella term that technically encompasses many different brands from Miyazaki, Hyogo, and other Japanese prefectures. All Miyazakigyu is Wagyu but not all Wagyu is Miyazakigyu. Miyazakigyu is one step above Miyazaki Wagyu and is the cream of the crop of all Wagyu from Miyazaki. It is quite literally the best beef in the world.

Australia has the largest Wagyu herd outside of Japan. It all started back in 1988 when farmers brought in Wagyu cattle and genetics from Japan. Australia has become one of the best in producing exceptional Wagyu and it’s all because of their attention to detail, commitment to the breed, great rainfall, clear springs and abundant grass. In order to achieve the highest-quality meat and exceptional marbling, it takes approximately 2.5 years before the cattle are ready. The first 6 to 10 months of their lives are spent feeding with their mothers and during the next 400 to 500 days they are fed under strict Japanese standards. Also, Australia uses the Japanese grading system and all Wagyu are graded between the 10th and 11th rib which is considered to give the most accurate overall marble score reading.
USDA (Hand Selected “UPPER”)
Black Angus cattle have always been recognized as a premier breed and have been known for exceptional tenderness and flavor with only Wagyu Beef being considered superior! Most Black Angus programs select their cattle solely on hide color. Our cattle are hand selected to be the best of the best and represent true Black Angus genetics. Only 1 in 100 cattle represent our producer’s standard! Nationally only 2% of all cattle grade out USDA Prime whereas 9% of our producer’s cattle grade out USDA Prime! In addition, they are born, raised, grazed and live their entire lives on small family farms in the USA. No Mexican or Canadian cattle! You won’t find this quality and consistency at your local grocery store or butcher shop!

Why dry-aged beef tastes better
All fresh beef is aged for at least few a days and up to several weeks to allow enzymes naturally present in the meat to break down the muscle tissue, resulting in improved texture and flavor. These days, most beef is aged in plastic shrink-wrap—a process known as wet-aging. Dry-aged beef, on the other hand, is exposed to air so dehydration can further concentrate the meat’s flavor. It’s a more expensive process than wet aging, because the meat loses weight from dehydration, and it also must be trimmed of its completely dried exterior. At Club Wagyu we Dry Age for 50+ days. This allows us to achieve the maximum roasted and nutty flavor that dry age meats are known for! Most purveyors only dry age for 20 to 30 days.
The Best Eating Pork, Period!
Don’t just take our word for it. In 1992, the National Pork Board tested nine sire lines for their meat and eating quality. Berkshire pork placed first in nineteen of twenty traits, including:
- Loin color
- Loin tenderness
- Loin marbling
- Best tasting in all test categories
- Superior cooked moisture content
Our Berkshire Producer is made up of a coalition of over 60 small independent family farmers. Many of these farmers are the 2nd, 3rd, 4th and in some cases the 5th generation of their family to be engaged in animal husbandry. All our farmers have committed themselves to the Berkshire Breed exclusively and to a strict code of responsible and humane animal husbandry. They each take pride in the product they produce, and work hard to ensure their animals are raised in a healthy, humane, environmentally friendly manner and do so with the utmost care and attention. Many of these family farmers are using production methods that have been passed down through many generations.
Some of these farmers’ ideals, when it comes to raising Berkshire pigs include:
- No antibiotics or hormones are used to promote unnatural growth
- Raised with room to move – they are not kept in confined spaces
- Fed a wholesome, all-vegetarian, grain-based diet
- Raised in a manner to minimize stress
- Are GLUTEN and MSG FREE and are easy to implement into a celiac or gluten-free diet.

“The Kobe Beef of Chicken”
Jidori® means chicken of the earth. It started in Los Angeles, where asian-fusion culinary pioneers were looking for a chicken as fresh and great tasting as the finest sushi. Original Jidori chickens were a cross between a Japanese Hinaidori and a Rhode Island Red. Jidori chickens are free-range and humanely raised on sustainable small farms in California. They are fed a purely vegetarian diet of natural grains with no meat by-products, and they are never given hormones, antibiotics or steroids. Jidori chickens are processed by a small, family-owned and run operation in Los Angeles. Chickens arrive daily to this small USDA inspected facility where they are hand processed and quickly delivered to distributors making it the freshest chicken there is. The benefits of this freshness can be tasted in the creamy yet firm texture and robust chicken flavor.

Crazy Tasty Bacon and Sausage
Our bacon comes from the ultra-tender bellies of Duroc Heritage breed hogs that are given time to mature, which creates that extra marbling for added flavor and juiciness. Then we hand-apply our signature dry-rub recipe made from the highest-quality ingredients, and slow-cure each belly in small batches. And we mean slow—we give it 12 days to absorb the standout flavors of the dry-rub—then smoke it in Cherrywood for eight hours. Because we don’t brine cure, you get more meat per package, plus, it won’t pop, splatter and shrink down to nothing when you cook it. Finally, we cut it nice and thick for that meaty, rich texture we’re known for.
Additionally we’re taking breakfast to a whole new level with our new Signature Uncured Breakfast Sausage. Made from 100% Berkshire Heritage Breed pork raised without any antibiotics, ever, vegetarian fed and crate-free. Our mouthwatering breakfast sausage will raise eyebrows and make you go, “damn, that’s good!” Hardwood-smoked uncured breakfast sausage in lamb casing. Gluten free.

Who does not love a nice breakfast in the morning with bacon, eggs, and sausage? I ordered the sampler pack form Club Wagyu and after one time my family was hooked. My youngest cannot get enough of the bacon and I cannot either. The sausage is so flavorful and juicy it makes our breakfast the best meal of the day. We are getting a subscription for sure and you should too.
The quality of Club Wagyu products is second to none. Last time I ordered a couple of Jidori airline chicken breasts, as my wife prefers white meet and WOW if you think you have tasted chicken you have not tasted this one. It was delicious, and I was quite surprised at just how much more flavorful the Jidori was compared to grocery store chicken. Hands down Jidori is the best chicken I have ever had!
Amazing quality and flavor make their products worth every penny! I have a subscription that comes every month in a nice well packed box. Everything I have tried so far is a notch above the other two well know competitors that I have tried in the past. I am a loyal Club Wagyu fan now! Keep up the good work! I’m very busy person but I consider myself to be a foodie and as such go out of my way to find great food products! A friend of mine recommended Club Wagyu and after checking out their website decided to give them a go. I am a seafood person; the Salmon and Sea Bass are my favorites.
